Five years ago today Mr Moose and I got married and our friends still talk about the food. We had a persian buffet, for 80 guests, all cooked by my amazing mother law. Our favourite food with our favourite people, it doesn’t get much better than that.

So today I’m sharing with you one of the dishes, Khoresh Fesanjan, a chicken, walnut and pomegranate stew, known by us as Pomegranate Chicken.

The first time I watched my mother in law make this she did it all by eye, so we had to weigh out everything because I cannot cope without scales and I’m no where near her experience level but I do get a lot joy from being able to make it.

It is best served with basmati rice and a salad shirazi (recipe below)

Pomegranate Chicken serves 4

2 Onions – Chop finely using a food processor. I use a mini chopper which is great for this and the walnuts.

200g walnuts – mince in a food processor.

100ml pomegranate molasses, I use Al Rabih which you can find in Sainsbury. (Don’t be tempted to use pomegranate juice, it’s not the same and cannot be used as a substitute)

4 Chicken breasts – cut into pieces 1.5L Water

1 tsp tumeric

pinch of salt

1) Fry the onions with the tumeric for few minutes

2) Add the chicken and fry until white image 3) Add 1.5 litres of water and the salt image 4) Leave to simmer for 30minutes

5) Take out the chicken using a slotted spoon and and place on a dish and put to one side

6) Add the walnuts and pomegranate molasses and leave to simmer for 1-2 hours until the water has reduced and you are left with a lovely sauce.

7) Add the meat, warm through and serve If you make in advance, place the meat and sauce in an ovenproof dish and heat in the oven for 20-30 minutes.

Salad Shirazi (Serves 4)

1 cucumber

6 vine ripe tomatoes

1 red onion

olive oil

Juice of 1 lemon

Dice the Cucumber, tomatoes and red onion and place in a bowl. Add a good glug of olive oil,lemon juice, salt and pepper. Give it a good mix.
